What you’ll need:

FOR THE SALAD:

  • 6 packed cups baby spinach
  • 2 mandarin oranges, peeled and sectioned
  • ¾ cup (3 oz.) raspberries
  • ½ cup (3 oz.) blackberries
  • ½ cup feta cheese, crumbled
  • ¼ cup walnuts

FOR THE VINAIGRETTE:

  • ¼ cup extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh (mandarin) orange juice
  • 1 tablespoon honey

What you’ll do:

  1. In a small bowl, whisk together vinaigrette ingredients until well combined
  2. Taste and adjust dressing to taste, and set aside
  3. In a large bowl, combine salad ingredients
  4. Drizzle the desired amount of vinaigrette on top
  5. Toss to combine and serve immediately

Omelets are a beautiful vacation breakfast because they’re quick, easy, and customizable. Check out this easy recipe from 5 Dollar Dinners.

What you’ll need:

  • 3 large eggs
  • 1 tablespoon milk
  • 1/4 cup cooked hashbrowns
  • 1/4 cup shredded cheddar cheese
  • 2 pieces of cooked bacon, diced
  • 1 tablespoon chives, diced
  • Sour cream, optional garnish
  • Salt and pepper to taste

What you’ll do:

  1. Spray the inside of a large coffee mug with nonstick cooking spray or grease with butter
  2. Pour eggs and milk into your mug, season with salt and pepper, and whisk with a fork until combined
  3. Mix in cooked hashbrowns, cheese, cooked bacon, and chives
  4. Microwave on high for about 2-3 minutes or until your eggs cook thoroughly
  5. Sprinkle more cheese on top and a dollop of sour cream and serve

Quick teriyaki chicken rice bowls recipe

What you’ll need:

  • 1 pound boneless skinless chicken breast, cut into bite size pieces
  • Salt and pepper

For the sauce:

  • 1/4 cup packed light brown sugar
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice or apple cider vinegar
  • 1/2 teaspoon ground ginger
  • 2 cloves garlic minced
  • 1 tablespoon cornstarch

additional:

  • rice
  • steamed broccoli

What you’ll do

  1. Cook rice according to package instructions
  2. Steam broccoli
  3. Season chicken pieces with salt and pepper and place in large nonstick skillet
  4. Cook until done, stirring often
  5. In a small bowl or a measuring cup, combine brown sugar, soy sauce, ginger, garlic, vinegar and cornstarch. Whisk together until there are no cornstarch lumps. Add sauce to chicken and cook stirring constantly, until it thickens into shiny glaze
  6. Remove from heat and serve immediately with rice and steamed broccoli
